1/4 cup goji berries
1 1/2 cups raw nuts & seeds
3/4 cup After Midnight – Dark
1 cup desiccated coconut
1/4 cup unsweetened dried sour cherries
1/2 cup coconut oil – melted (120g)
1/4 cup raw honey
Extra desiccated coconut – decoration!

Method

  1. Blend nuts to a fine crumb in a food processor or transfer to a bowl, and combine all remaining ingredients. Mix well until you have a sticky mixture.
  2. Using a lined baking tray or silicone mould, press your mixture until you have a 1/2 inch-thick layer. Sprinkle extra coconut on top if you like!
  3. Freeze for 30 mins until the mix has gone hard. Take it out, remove from the tray and cut it into snack-sized rectangles or triangles. Enjoy!
  4. Store them in a container in the fridge for up to two weeks (although they probably will be eaten long before…)
